greek orzo salad
this is a great, easy side dish that comes together pretty fast. it's refreshing, light and pretty healthy. you can add any veggies you like. great substitutions would be zuchinni, spinach, capers, or sundried tomatoes.
ingredients:
1 cup dried orzo
2 roma tomatoes, seeded and diced
1/4 olives, sliced
1/4 cup red onion, minced
1/4 cup feta cheese
1/3 cup cucumber, diced
2 garlic cloves, minced
2 tablespoons parsley, minced
1-2 tablespoons evoo
juice of 1/2 lemon
1/4 teaspoon oregano

directions:
bring a large pot of salted water to a boil. add orzo and cook according to package directions. meanwhile add tomatoes, olives, red onion, feta, cucumber, garlic and parsley in a large bowl. once pasta has finished cooking, add hot noodles to vegetable mixture. add evoo, lemon juice, oregano and s&p. serve immediately or at room temperature.
